so chef, how's working at the country club? (or did i remember wrong?)
Probably the best and most Cooosh coooosh job a chef can have. 85% of the time i work 5 days a week 8-9/hrs a day. I get 1 month of minimal supervising (so about 20/hrs a week for 4 weeks) due to overseeding and still get paid my salary. I also get 2 weeks a year vacation and 80% of the time my restaurant closes by 6pm year-round. I also get X-mas off which is a wonderful thing. So in terms of a chef job...this has got to be one of the best. I must admit it'll be hard for me to consider another casino gig.
I'll probably be looking into another coutnry club gig in LA in the next few years to try to move back.
